I honestly don’t mean to sound dramatic when I say this, but these dairy free white chocolate caramel cookies are the shit. Holy guacamole. If you follow us on Instagram, you might remember the cookie trial disasters of the end of 2018, no matter what I did, I couldn’t make cookies happen. All I would end up with was cake, and I don’t know about you, but I don’t want that in my cookies. Then, by some Christmas, baby Jesus endorsed miracle, this bloody incredible recipe arrived and changed my life.

Now that I have managed to conquer cookies, I’ve started to adapt, change, and shake up the recipe to add new flavours to my cookie repertoire. These dairy free white chocolate caramel cookies are super chewy, but in a good way, and really remind me of those incredible supermarket cookies that I used to be able to eat many moons ago.

These dairy free white chocolate caramel cookies gain their gorg texture from the extra brown sugar, which makes them chewier and adds that insane caramel flavour. The white chocolate works so perfectly along side this and honestly, these are some of the best cookies I have ever eaten.

Ingredients
  • 100 g DF Butter, Melted
  • 150 g Brown Sugar
  • 95 g Granulated Sugar
  • 1 tsp Vanilla
  • 1 tsp Salt
  • 1 Egg
  • 185 g Plain Flour
  • 150 g White Chocolate, Chunks
Instructions
  1. Preheat the oven to 170°C.

  2. In a microwave safe bowl, melt the butter in 20 second blasts in the microwave until runny.

  3. Add your sugars, salt and vanilla to the bowl and mix until incorporated.

  4. Add in the egg and mix until incorporated.

  5. Sift in the flour and stir until just combined.

  6. Add in 100g of the white chocolate and stir until just combined.

  7. Chill in the fridge for half an hour.

  8. On a greaseproof paper lined baking tray, dollop the cookie mixture evenly and leaving enough space for the cookies to spread. put 3-5 chunks of white chocolate onto the top of the cookie dollops to give the shop bought effect when they’re cooked.

  9. Put in the oven for 11 minutes, they should be quite squishy when they come out.

  10. Leave to cool, as the cookies cool, they will firm up and form a soft and chewy texture.
