Easy vegan macaroni cheese

I don’t know about you, but cheese makes my heart sing. There is honestly nothing better than filling your mouth with melty, cheesy goodness; which is where macaroni cheese comes in. A combination of two of the worlds greatest foods: cheese and pasta, which come together in the best way. Now I’m sure you’ve all had mac and cheese before (if you haven’t what planet are you living on?!) and we thought it was high time we shared our own recipe with the world, so lets get into it…

The recipe serves 3 large portions or 6 side portions and takes about 40 minutes to make.

Equipment:

  • 2x Saucepans
  • Grater
  • Colander
  • Oven proof dish
  • Wooden spoon

Ingredients:

  • 2x blocks of your favourite cheese (we used manchego and a vegan cheese)
  • 250g macaroni pasta
  • 1/2 packet of cream cheese
  • 50g butter
  • 50g plain flour
  • 500ml milk
  • 1tsp mustard
  • 25g breadcrumbs (we used panko)

Method:

  1. Boil a saucepan of water, when simmering, add the macaroni and cook until soft.
  2. Whilst your pasta is cooking, grate your cheese, making sure to save some for the top.
  3. Drain your pasta in a colander and pour into your oven proof dish.
  4. Add most of the cheese and all of the cream cheese to the pasta and stir to combine.
  5. in another saucepan, melt your butter. once melted, add the flour and stir until a paste is formed.
  6. slowly add the milk, mustard, s&p and simmer until you achieve a nice, thick white sauce.
  7. Carefully pour the sauce over the pasta mix and stir until combined.
  8. Sprinkle over the top your breadcrumbs and remaining cheese.
  9. Pop in the oven at 180°C for 20 minutes until golden brown and bubbling.
