I have honestly been meaning to post this double chocolate dairy free monster cookies recipe for about 6 months now, so apologies for the delay. This cookie recipe took me a while to perfect; bizarrely, it’s vegan counterpart was easier and came first to the party! I think when you make these double chocolate dairy free monster cookies though, you’ll soon agree that they were definitely worth the wait.

For those that have perused my account for a while will know that cookies did not come easily for me. They were a massive challenge! Me and cookies did not get on with each other for the longest time. That all changed when this recipe came into my life (which I have naturally tweaked, ofc). This changed my cookie trajectory completely. I managed to make them finally! From here, I really gained the confidence to delve into other realms of cookie making, deciding to take on the mantle of the monster cookie.

Now what makes for a good double chocolate dairy free monster cookies you may ask? A lot of chocolate is my answer. I enjoy a mixture of different shapes and sizes, for example for these images I used Bournville buttons and standard dark chocolate chips. DF white chocolate is also a fabulous option too, for this, I use the Sainsburys one.

The real reason why it took me so long to post this was I just could not get my egg ratio right for the longest time. I tried mediums, larges, whites only, yolk and eggs; until I finally stumbled upon the perfect blend of two egg yolks. Two egg yolks are the perfect combination to bind, yet also give that incredible soft as butter texture that you crave from a big cookie.

This mixture for me makes around 10-12 balls, however, you can go as big as you want with these. If you want super monsters, just add a couple more minutes to the bake time.

A top tip for you all is to keep some of the cookie batter behind and in the freezer, ready for those days where you are just desperate for cookies! So there you have it, the double chocolate dairy free monster cookies recipe is here for you to devour!

Incredibly delicious dairy free double chocolate monster cookies!

Ingredients
  • 165 g DF butter
  • 145 g Light brown sugar
  • 95 g Granulated sugar
  • 2 egg yolks, large
  • 1 tsp Vanilla
  • 1/2 tsp Salt
  • 40 g Cocoa powder
  • 230 g Plain flour
  • 250 g Chocolate of your choice
Instructions
  1. In a mixing bowl, cream together the sugars, vanilla, salt and butter until light and fluffy.

  2. Add in the two egg yolks and mix.

  3. Add in your flour and cocoa and mix until a pliable dough is formed.

  4. Add in most of your chocolate and stir to combine (save some for later!)

  5. Place the dough in the fridge for a minimum of 30 minutes to chill.

  6. Preheat your oven to 170°C (Fan) or 180°C (non fan).

  7. On a lined baking tray, add golfball sized balls of dough. Top with some chocolate saved from before.

  8. Bake in the oven for 10 minutes. Take out of the oven and leave to cool completely (the cookies will set as they cool, do not overbake!)
