Oat Pancakes with Blueberry Compote

Sunday mornings are the best aren’t they? You can laze around in bed all morning, and leisurely get up to make amazing brunch, whether you’re just treating yourself, a partner or friends and family, why not do it with these healthy, super filling pancakes? With only three ingredients in the pancakes, you can prepare and serve them all in 10 minutes, perfect for when you just want to crawl back into bed…

This recipe serves one, for each additional serving just double the ingredients.

Equipment:

  • small saucepan
  • frying pan
  • food processor or mini blender

Ingredients:

  • 50g Porridge oats (not instant)
  • 1 egg
  • 1 banana (the riper the better)

For the blueberry compote:

  • 50g blueberries (frozen or fresh are fine)
  • 30g sugar (if you prefer a tarter sauce, use less sugar)
  • 15ml water

Method:

  1. In the small saucepan, add your blueberries, sugar and water and place on a low heat on the hob, stirring occasionally.
  2. In your food processor/ mini blender, add your oats and blitz until a fine powder.
  3. Add in the banana and blitz again until the banana is well combined and not lumpy.
  4. Add in the egg and blitz until a smooth mixture is formed.
  5. Lightly grease a saucepan and spoon half of the mixture in and spread out to form a circle about half a cm thick.
  6. When lots of bubbles have formed on top of the pancake, use a spatula to flip the pancakes over.
  7. When golden brown and firm, remove from the pan and serve with your compote.
