Spinach and Butternut Squash Soup

Soup is the ultimate food in my opinion, packed full of whatever veg you need to use up, fibrous, cheap, and an easy way to get some of your five a day. Soup is one of the most adaptable meals there is, you can literally put any vegetables together! In our soup we used carrots, butternut squash and spinach straight out of the freezer, boiled with a small amount of water to gain a super thick texture (the thicker you want your soup the less water you use) and finished with cream, salt and pepper.

Equipment

  • Saucepan
  • Hand blender

Ingredients

  • 150g carrots
  • 1 onion
  • 300g butternut squash
  • 75g spinach
  • 1 vegetable stock cube
  • 50ml single cream

Method

  1. Add all of your vegetables, stock cube and water to a saucepan. For a thick soup make sure the water only just covers the vegetables.
  2. Put a lid on and simmer for 15 minutes until the vegetables are soft.
  3. When the vegetables are soft, carefully pulse the soup with a hand mixer until blended and at the consistency you want.
  4. Mix in salt, pepper and cream to taste.
  5. Serve with a drizzle of cream, salt, pepper and a smidge of hot sauce.
