Now I know this is a bold claim to be able to say I have the best overnight oats recipe, but trust be, I do. I love overnight oats, they have kept me going throughout my teaching career and have helped me to stave off rather aggressive hunger pains, whilst letting me feel like I have eaten pudding for breakfast. Good right?

Overnight oats really did change the whole game for me, and if I don’t have them of a work morning I feel a little bit bereft. It’s taken years of practice to really nail my overnight oats recipe. I used to use milk and peaches, but I moved onto blueberries and yoghurt and that is what really nails the creaminess for me.

I have also started using my overnight oats as a vehicle for other things, like flax and chia as they blend in and add to the lovely texture of the pudding. Now those who know me know that I have massive texture aversions to most fruit (you will not see me eating a strawberry, sorry) but blueberries are ok and work incredibly in this. I would say blueberries work even better if they’re already frozen, as you get their lovely juices permeating through the oats. Delicious.

From experience I would stick to ‘normal’ oats, jumbo oats just don’t absorb the yoghurt quite as well as your average oats which can make the texture a little bit claggy, which I am personally not a fan of. I also use a substantial amount of oats at 60g, because if I am running around all day on my feet I need sustenance- and it provides me with a wicked source of fibre too.

To really nail the best overnight oats recipe you need yoghurt. Yoghurt adds thickness, texture and if you choose the right yoghurt, it transforms your breakfasts flavour. I am obsessed with the Alpro Vanilla Yoghurt as it makes everything taste like pudding. I’ve tried other flavours and I am just not a fan. If you like other flavours then by all means, go for it.

The final addition to the best overnight oats recipe that makes it sing is the chocolate chips. Only a small amount, but seriously, biting into one of those chips in the morning is heavenly and I dare you to tell me otherwise.

Quick and easy to assemble vegan overnight oats, sprinkled with chocolate chips and blueberries, absolutely heavenly.

Ingredients
  • 60 g Regular oats
  • 5 g Flax seeds (optional)
  • 5 g Chia seeds (optional)
  • 15 g DF chocolate chips
  • 50 g Blueberries, frozen
  • 250 g DF vanilla yoghurt
Instructions
  1. Add all of your dry ingredients and blueberries to your container and stir.

  2. Add in your yoghurt and stir until fully mixed into your dry ingredients.

  3. Add on your lid and leave in the fridge overnight, or for at least 2 hours to thicken and absorb.
