Nothing is more exciting to me than discovering a new breakfast. When I went travelling, I tried tonnes of different breakfasts, from fluffy pancakes to spicy eggs and a vegan chia pudding with peach puree. I had a great vegan chia pudding with peach puree in Bali, and I’ve been hankering after it ever since! As luck would have it, on a trip to Aldi, I stumbled upon chia seed packets for under £2.50 (in the UK, they’re normally around £4-5 a pack!) which prompted me to recreate the delicious meal. After the roaring success of the post on instagram, I decided to give you the recipe too.

Chia seeds are full of omega 3, which help your brain and your body to function. When soaked overnight, they swell up and leave you with a nice, thick pudding. I topped this one off with peach puree because who doesn’t love peaches? Be warned though, if you have texture issues they might not be for you, but as I am someone who can’t eat strawberries because of the bits, and I eat chia pudding with peach puree, the chia puddings might be ok for you.

The recipe is really easy to create and follow, and I have also seen parents feeding their babies chia puddings too (just watch out for the bits!).

Chia Pudding with Peach Puree

A quick and easy overnight breakfast that is vegan, filling and packed with omega 3.

Ingredients
  • 15 g Chia Seeds
  • 50 ml Milk/ Yoghurt
  • 120 g Peaches
Instructions
  1. In a bowl, mix together the milk/ yoghurt and chia seeds until the seeds are just covered.

  2. In a mini blitzer, puree 8 peach slices (you can add a little sugar if needed) until a puree is formed.

  3. Top the chia seeds with the puree and leave overnight to set.
