Brownies should be a food group, there is no denying it. Given the choice between a brownie and say, a doughnut, brownies would win every. single. time. At Christmas time I first dabbled in the vegan chocolate brownie world, to the point where my brother actively stole (thanks Craig) most of the slab and took it home to Bristol with him, so you could tell I was onto a winner then!

These ultimate vegan chocolate brownies like always, has come from a barrage of adaptations and changes that I have made (because I am never happy unless they are perfect) and when I tell you they are so easy you could make them blindfolded, I am not exaggerating! Melting chocolate, milk and oil together and then popping your dry ingredients in and mixing and plopping into your lined baking tray is all you have to do!

The texture of these ultimate vegan chocolate brownies really reminds me of those tubs of brownies from the shops I used to be able to eat! They are soft, densely chocolatey (which is the only way to be) and so fudgy it is unreal! Now let me be clear, they are a different texture to my other brownie recipe that contains eggs, but they are still just as incredible and I am proud as punch to pop them on my blog!

Ingredients
  • 165 g DF chocolate melted
  • 60 g Coconut oil
  • 225 g/ml DF milk
  • 70 g Cocoa Powder
  • 155 g Plain flour
  • 75 g Light brown sugar
  • 150 g chopped chocolate (any DF kind)
Instructions
  1. Preheat your oven to 160°C and line your tin with baking paper.

  2. Melt your chocolate, milk and oil in a heatproof bowl in the microwave in 30 second blasts until combined.

  3. Add in your sugar, flour and cocoa powder and stir until combined.

  4. Add in your chopped chocolate, saving a few pieces for the top!

  5. Add your brownie mixture to your tin, decorate the top with your remaining chocolate and bake in the oven for 15-20 minutes and just set.

  6. Leave to cool and then chop into pieces.
