Now that I am getting back into the world of work after my six month travelling hiatus, this vegan breakfast banana bread is so handy. It’s very easy to make, vegan, and if you had no time at all, would work perfectly as an all in one bake. It’s healthier than normal cake too. There’s no flour to play with, and the oats provide you with lots of fibre (which is what fills you up!).

The vegan breakfast banana bread is very easy to adapt to be gluten free too, just use gluten free oats instead. You can fill the bread up with whatever you like, whether that’s chocolate chips like us, or raisins, dates, sultanas, cherries, you name it! You can slice it up about 2 hours after bake, and individually wrap in foil/ tubs. The vegan breakfast banana bread tastes incredible, and my mom even said it was one of my best ever bakes too. If mom is saying it, it must be right, right?

  • If you’re short on time, it’s really easy to just plonk all of the ingredients into a bowl and mix together.
  • The bread will rise a little, but will be slightly flatter than other banana breads due to the lack of flour.

Ingredients
  • 100 g butter
  • 100 g soft brown sugar
  • 2 overripe bananas mashed
  • 200 g oats rolled oats, not instant
  • 1 tsp mixed spice
  • 1 tbsp golden syrup can use honey if vegetarian
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 packet dark chocolate chips
Instructions
  1. Preheat the oven to 180ºC.
  2. Cream the butter and sugar together until light and fluffy.
  3. Add in the mashed bananas and mix until combined.
  4. Add in the baking powder, mixed spice, honey, vanilla, oats and chocolate chips and mix until combined.
  5. Add into a greased loaf tin and cook for 40 minutes until crisp on top and a knife runs clear.
  6. When cool, slice into 6 wedges.
